It’s officially summertime! The peach harvest for orchards is coming soon for the Midwest of the USA. However, in other warmer climates they probably have already been ready for the pickings! If you get a chance Colorado has some great peach local family orchards with tons of fun family events. Don’t forget your local farmers market as well! Always try to promote the local small farmers instead of large corporations.
Peaches are super healthy for you!
They are high in all the fun stuff, such as vitamins, minerals, other plant compounds. For instance just one medium peach as the following health wins. This is 1 gram protein, carbs 14 grams, fiber 2 grams, vitamin C 17% what you need per day, vitamin A daily value, vitamin C 17g, Potassium 7%, Niacin 6%, vitamin E 5%, copper & manganese 5%, Vitamin K 5%. They can help with digestion, great for heart health, may protect your skin, cancer and allergies. A peach should also increase your immunity.

Prairie Peachy Pops Recipe
Ingredients:
1 Pound of Local Peaches, peel and cut into wedges
Pinch of Celtic or Himalayan Sea Salt
1/2 teaspoon of vanilla extract (the real stuff not imitation)
6 Tablespoons of Local Honey
2 cups of yogurt (whichever you want, make it fun)
1 tablespoon lemon juice (real lemon squeezed)
*Don’t forget to buy your popsicle molds”
Preheat the oven 325F. Next, get a baking sheet pan then add parchment paper since, tin foil is super bad for you.
Step 3 Grab the sliced peaches eating a few, best part of being a baker or cook is tasting it to see what is missing for flavors. Then add to the baking sheet pan that is on the counter next to you. Its toss the peaches time! Add 2 tablespoons of honey with the salt you have. Then move the peaches in military form, evenly single rows. Grab your mittens then add the peach pan into the oven. It shouldn’t take long baking them for about 30 minutes, stirring around 15 mins. Then after 30 minutes total take them out to cool off.
While the peaches cool off, you can grab another bowl and mix the yogurt, what’s left of the honey, vanilla and lemon juice. Add this mixture into the refrigerator to get nice and cold.
Get your large bowl add peaches with the yogurt mixture and mix all them together. Then add them into the molds. Lastly add the popsicle sticks into each mold. Then add them into the freezer. It could take hours so make these in the morning!
