Food prices aren’t getting any cheaper.

That’s one reason I’ve been focusing on simple meals built around affordable, protein-rich ingredients. The best recipes aren’t complicated—they’re practical, filling, and made from foods many of us already keep in the pantry.

This 5-ingredient bean and egg skillet checks every box.

It’s inexpensive, packed with protein, and comes together in about 15 minutes.

Ingredients

  • 1 can black beans, drained
  • 4 eggs
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 tablespoon olive oil

Directions

  1. Heat olive oil in a skillet over medium heat.
  2. Add black beans and salsa. Stir and cook for 3–4 minutes.
  3. Create four small wells and crack an egg into each.
  4. Cover and cook until eggs reach your preferred doneness.
  5. Sprinkle cheese over the top and let it melt.

Why I Love This Recipe

The combination of beans, eggs, and cheese creates a surprisingly satisfying meal that delivers plenty of protein without relying on expensive meat.

It’s also flexible. Add garden herbs, hot peppers, or fresh tomatoes when they’re available. Serve it on its own or with homemade bread.
